PKU Mushroom Stuffed Potato Cake Buns

These Mushroom Patties are so tasty and easy to make. We adapted the recipe from an Pinterest post.

You will need

  • 400 g of boiled then mashed potatoes (5 exchanges)
  • 100g of low protein flour
  • Salt and pepper to season
  • 1 pack of mushrooms, chopped
  • Small bunch of fresh dill
  • 1 medium size onion, chopped
  • 2 cloves of garlic, chopped
  • 1 tblsp of oil and extra for frying

First make the potato dough by combining the mashed potato, flour and salt and pepper in a mixing bowl. Knead by hand until it forms a smooth dough. Cover and set it aside.

Next prepare the filling. Heat 1tbsp of oil into a frying pan and fry garlic and onions, then add the mushrooms and cook until most of the moisture is gone. Take it off the heat, add the dill, salt and pepper to taste.

Weigh the potato dough and divide it into 20 equal balls. Flatten each ball into a disk. Take one of the disk and place a teaspoon of the filling on it then place another potato disk and seal edges with pressing by hand. You should end up with 10 patties. Shallow fry in a frying pan on medium heat.

Each patty is 0.5 exchanges (UK ) but you can make them less by dividing the potato dough into more balls, making them smaller.

Next time, we are thinking of making different fillings. We plan to add low low protein vegan cheese to the filling. You could also try some of the alternatives below if you like:

  • Butternut squash
  • Low Protein cheese and onion
  • Just low protein cheese

The list goes on – our son says he would like skittles as filling 🙂
