This was first attempt to make some PKU sausages. I used the recipe from FATE Cookery Book. It was very pleasing to see my son scoffing them. He was enjoying the freedom of feeding himself very much.

Here’s the recipe:

FATE ORIGINAL SAUSAGES

Ingredients

  • 200g Fate Low Protein All-Purpose Mix
  • 1/2 tsp salt ground black pepper
  • 1 tsp dried sage 1 tsp oregano – optional
  • 1/2 tsp dried minced onion or onion granules (I used finely chopped onion)
  • 3 tsp suitable tomato ketchup ( I used Waitrose Essential Ketchup)
  • 50 ml oil
  • 100 ml water
  • Extra Fate Low Protein All-Purpose Mix for shaping
  • Oil for shallow frying

Directions:

  1. Place the Fate Low Protein All-Purpose Mix, salt, pepper, sage, dried onion (or chopped onion if used), and oregano into a mixing bowl and mix well
  2. In a separate jug, stir together the ketchup, oil and water
  3. Pour the liquid into the dry ingredients. Mix well with a metal spoon until it’s well combined and smooth
  4. Leave to rest for about 1- 2 minutes
  5. Dust your hands lightly with Fate Low Protein All-Purpose Mix and knead the mixture just a couple of times to make the ingredients are well blended
  6. Take a spoonful of the mixture, around 35g – 50g and roll into a sausage shape on the work surface, using a little extra Fate Low Protein All-Purpose Mix to prevent sticking
  7. Shallow fry in a little oil until golden brown

Alternetively; you can cook these sausages brushed with little oil under a grill or on a barbecue

HINT: Fate Sausages freeze well. You can freeze them soon after shaping.
